My #1 go to meal is Sausage Bean Burritos. For many reasons: it’s quick, the girls love it, and it makes a ton. In my opinion, it tastes even better day 2 and 3. Instead of wrapping this deliciousness up in a tortilla for lunch the next day, I opt for a burrito bowl instead.
We have enough left overs for four + lunches for my husband and I. Just reheat and top with a dollop of Greek yogurt and cubed avocado.
The brown rice and black beans leave you feeling full all afternoon. The Greek yogurt (or sour cream) add the perfect creamy touch. The star of this bowl; however, is the avocado providing a serving of healthy fats, creamy texture and amazing flavor.
Any lunch is better than eating my kids’ table scraps (which happens occasionally), but these Sausage Bean Burrito Bowls are a 10 in my book. Give it a try and let me know what you think!
Sausage Bean Burrito Bowls
A healthy twist to a burrito with protein, veggies, and healthy fats!
- 1/2 cup green pepper diced
- 1/2 cup onion diced
- 1 lb pork sausage
- 1 can black beans rinsed
- 2 cups brown rice cooked
- 1 1/2 cups salsa
- 1 tbsp greek yogurt
- 1/2 avacado
Cook brown rice according to package instructions.
Brown sausage, pepper and onion in large skillet over medium high heat.
Reduce heat to medium low and add black beans, salsa & cooked brown rice to the skillet. Cook until heated through.
Serve in a tortilla for burrito, or in a bowl topped with a dollop of greek yogurt and 1/2 an avocado.
