We picked today to be a family fun day. Terry took the day off of work and we planned a few fun surprises for the girls and it was a blast. We were almost exhausted by 1pm but that’s the fun of special days. We’ll all sleep good tonight.
Terry and I have a christian camping conference next week Monday-Wednesday, so I’m utilizing a couple of my go-to freezer meals to make things easier on my in-laws who are watching the girls! The chicken pot pie recipe is the #1 recommended meal by our oldest daughter!
Here’s what we’re eating the next couple of weeks!
Sunday – Out to Brunch/ Sunday Night Supper at Church
Monday – Tortilla Pizza + veggies + humus + fruit salad
Tuesday – Chicken Pot Pie from Meal Planning Magic
I make this way easier by using a bag of frozen mixed veggies! I’m making two, using one tonight and freezing one for next week!
Wednesday – Nana & Papa’s for Dinner
Thursday – Chicken Parmesan from Thriving Home
I’m doubling this and making two meals again to save one for next week when we’re gone at a conference!
Friday – Burgers on the grill + baked beans + coleslaw
Saturday – Pork Carnitas from Six Sisters’ Stuff + chips + guacamole
This recipe is amazing! The broiling at the very end knocks it out of the park!
Sunday – Venison Roast + Potatoes + carrots + homemade bread (favorite bread maker recipe)
Monday – Chicken Pot Pie Freezer Meal
Terry and I have a conference Monday, Tuesday & Wednesday, so I tried making things as easy as possible for my in-laws who are watching the girls Monday and Tuesday!
Tuesday – Chicken Parmesan Freezer Meal
Wednesday – Salisbury Steak + Mashed Potatoes + Corn
I’m using the frozen dinner from Aldi, instant mashed potatoes and canned corn for a quick and easy meal when I get home from the conference Wednesday late afternoon!
Thursday Sausage Bean Burritos + apple sauce (didn’t get to this meal last week!)
Ingredients: 1-2 cups cooked rice (I use brown rice, more will stretch the meal further)1 lb pork sausage,½ cup green pepper, chopped, ½ cup onion, chopped, 1 can black beans, rinsed, 1 ½ cups salsa, Tortilla shells, Shredded cheese
- Prepare 1-2 cups of rice according to package directions.
- Brown sausage with onion and green pepper.
- Add black beans, salsa and rice and stir until blended. Heat through.
- Serve in tortilla shells topped with shredded cheese.
- Or serve in a bowl topped with avocado and sour cream
Friday – Pizza + Salad
Saturday – Dijon Pork Chops + onions + Green beans
