Meal Plan Monday – February 12-25

Despite having sick kiddos, it was a nice weekend! Saturday I had a bunch of girls come over to try a Charcoal Facial, drink mimosas and chit chat. It was such a fun morning. A big thanks to my hubby for taking the girls to his parents (Thanks Dennis and Julie!!) so that I could have some mom time!

My sweet friend Heather brought me these beautiful flowers. It’s amazing how one vase of flowers can make it feel like spring. We’re still in the middle of Michigan winter here, so we’ll keep enjoying some of our favorite warm comfort foods. Here’s what we’re eating for the next two weeks!

Sunday  – Pizza takeout + salad

Monday  – Tacos + chips + quac

Tuesday – Chicken Fried Rice from A Pinch of Healthy

Happy Valentine’s Day! I think we’ll set the table with our best linens and China for a special Valentine’s Day Dinner with the girls! We were able to get out last Thursday for a Valentine’s Date!

Wednesday – Friend’s House for Dinner

Thursday – Baked Chicken + roasted veggies

Ingredients: sweet potatoes, cauliflower, broccoli, olive oil, sea salt, pepper

Instructions:

  1. Line a cookie sheet with foil and spread veggies on tray.
  2. Drizzle veggies with olive oil and toss to coat evenly
  3. Sprinkle with sea salt and pepper
  4. Bake at 425 degrees for 20-25 minutes

Friday – Sloppy Joes – we never got to the last week!

Saturday – Kitchen’s Closed – Winter Retreat

Sunday – Beef Roast + Potatoes + Carrots + Homemade Bread from the Pioneer Woman

Monday – Chicken Broccoli Alfredo from Julia’s Album (I’m going to double the recipe)

Tuesday – Sausage Bean Burritos + apple sauce

Ingredients: 1-2 cups cooked rice (I use brown rice, more will stretch the meal further)1 lb pork sausage,½ cup green pepper, chopped, ½ cup onion, chopped, 1 can black beans, rinsed, 1 ½ cups salsa, Tortilla shells, Shredded cheese

Instructions:

  1. Prepare 1-2 cups of rice according to package directions.
  2. Brown sausage with onion and green pepper.
  3. Add black beans, salsa and rice and stir until blended. Heat through.
  4. Serve in tortilla shells topped with shredded cheese.
  5. Or serve in a bowl topped with avocado and sour cream

Wednesday – Teriyaki Chicken Casserole from Life in the Lofthouse

Thursday – Sautéed Orange Shrimp + Brown Rice from Taste of Home

Friday – Kitchen’s Closed

Saturday – Slowcooker Spicy Chicken + Rice from 5 Boys Baker

I’ve been trying quite a few new recipes lately, and I’m happy to report a few are going to join the rotation of favorites. I hope you find something your family loves!
